This page contains many of our favorite recipes, collected for convenience. Some are family-based, some are from cook books, some are from Web sites; those from other sources, are referenced as possible.

German Potato Salad

This dish has bacon and onion in diced potatoes all mixed with a sweet vinegar flavor, serves 4-6 hot. Pretty much all of the amounts can be flexed to taste. Church of Our Lady of Good Counsel, Verona, NY Favorite Recipe Cookbook.

  1. Peel potatoes after cooking and slice thinly into large casserole dish
  2. Add flour, onions, sugar, salt, and pepper to casserole and mix
  3. Cook bacon in frying pan until just crisp
  4. Add bacon, drippings (optional), water, and vinegar to casserole and mix thoroughly (if needed, add hot vinegar and water evenly)
  5. Bake, covered, at 350° for about 45 minutes
  6. Serve hot

Applesauce Pancakes

These pancakes are light with a touch of cinnamon. Makes enough for 2 people for a full breakfast.

  1. Beat egg until fluffy
  2. Beat all ingredients in bowl
  3. Pour batter onto griddle to size as desired
  4. Serve hot

Ham and Potato Frittata

A very hearty breakfast-for-anytime meal with eggs, ham, potato, and vegetables all together. The Recipe Link

  1. Melt 2 tablespoons butter in 10-inch oven-safe skillet (cast iron)
  2. Brown potatoes in skillet over medium-high heat
  3. Remove potatoes from skillet
  4. Melt remaining 1 tablespoon butter in skillet
  5. Saute peppers, onions, mushrooms, ham, and garlic until tender
  6. Remove vegetable mixture from skillet
  7. Add oil, potatoes, vegetables, and parsley to skillet
  8. Beat eggs, salt, and pepper in a bowl and pour over mixture in skillet
  9. Preheat broiler
  10. Cook skillet on stove 10 to 15 minutes until eggs are almost set
  11. Broil skillet 2 minutes until eggs are set
  12. Sprinkle cheese on top and broil until it melts
  13. Serve hot

Boston Cream Pie

This pie/cake is a nice light, cool dessert that mixes it up from regular cake.

  1. Preheat oven to 350°
  2. Mix ingredients in bowl
  3. Pour batter into medium pie plate
  4. Bake at 350° for 45 minutes until cooked through
  5. Cool cake in pie plate
  6. Remove cake from pie plate and cut in half laterally (as evenly as possible)
  7. Place bottom of cake on platter and spread with warm pudding (just enough to cover, though extra is not a problem)
  8. Lay top of cake on bottom and pudding and allow to cool
  9. Frost cake and refrigerate
  10. Serve cool or cold

Tilapia with Garlic Butter

Tilapia is naturally quite light and the garlic adds a nice flavor to it without overpowering the dish. Good with salad and a Rice-a-Roni type side. About.com.

  1. Combine butter, garlic, salt, parsley, and paprika in a sauce pan and simmer lightly then remove from heat
  2. Line pan with foil and brush filet-sized areas lightly with butter mixture and place filets in pan
  3. Brush tops of filets with butter mixture
  4. Bake at 350° for 12 to 15 minutes

Green Pepper Couscous

Nice light side that is the dish that taught me to like couscous. Ochef.com.

  1. Sauté onion and pepper in melted butter in pan 10 minutes
  2. Add garlic and Sauté another 5 minutes
  3. Add water and bring to a boil
  4. Add couscous, cover, and remove from heat
  5. Let stand 5 minute and fluff
  6. Add salt and pepper to taste and serve hot

Biscuits

Easy and tasty biscuits for a side or (even better) the base of strawberry shortcake (just add 3-4 cups sugared sliced strawberries and 1 cup whipped cream).

  1. Preheat oven to 450°
  2. Mix dry ingredients
  3. Cut in cold butter and mix until crumbly
  4. Mix in eggs and cream
  5. Spread biscuits into pan (size as desired)
  6. Bake at 450° for 15-18 minutes
  7. Serve hot or warm
