Vegetable Lo Mein
This is one of my favorites that I actually made (!). Thick noodles with several vegetables and (optional) meat in a tangy and swet sauce. It is very good hot, warm, or cold. Familyoven.com.
- ½ teaspoon ground ginger
- 2 tablespoons honey
- 2 cups mushroom, sliced
- ½ cup sliced green pepper
- ¼ cup vegetable oil
- 1 medium onion, chopped
- ¼ cup hoisin sauce
- 1 tablespoon cornstarch
- ½ pound spaghetti
- 1 cup chicken broth
- 1 tablespoon soy sauce
- ¼ teaspoon curry powder
- 1 cup shredded carrots
- 2 cloves garlic, minced
- ¼ teaspoon chili powder
- 1 large chicken breast, cubed and cooked
- Cook spaghetti until al dente and drain
- Heat oil in a large pan
- Add mushrooms, carrots, peppers, onion, and garlic and cook until tender
- Thoroughly mix cornstarch, chicken broth, hoisin sauce, honey, soy sauce, ginger, chili pepper, and curry powder in a small bowl and add to pan
- Cook and stir until thickened and bubbly
- Add cooked chicked to mixture and stir thoroughly
- Serve hot, warm, or cold, as desired
