Vegetable Lo Mein

This is one of my favorites that I actually made (!). Thick noodles with several vegetables and (optional) meat in a tangy and swet sauce. It is very good hot, warm, or cold. Familyoven.com.

  1. Cook spaghetti until al dente and drain
  2. Heat oil in a large pan
  3. Add mushrooms, carrots, peppers, onion, and garlic and cook until tender
  4. Thoroughly mix cornstarch, chicken broth, hoisin sauce, honey, soy sauce, ginger, chili pepper, and curry powder in a small bowl and add to pan
  5. Cook and stir until thickened and bubbly
  6. Add cooked chicked to mixture and stir thoroughly
  7. Serve hot, warm, or cold, as desired
