Jess's Sauce

Nothing like home cooked sauce to go with anything.

  1. Thinly coat bottom of large sauce pan with olive oil over medium-low heat
  2. Sauté onion and pepper in oil a few minutes
  3. Add tomato paste, stir, and simmer for a few minutes
  4. Add 4 cans water for each can of tomato paste, stir
  5. Add several shakes of basil and oregano, a few shakes of red pepper flakes, and a few bay leaves
  6. Cook uncovered over low heat for about 2 hours, stirring occasionally
  7. Add spices to taste
  8. Serve hot or freeze for later
