Jess's Sauce
Nothing like home cooked sauce to go with anything.
- 1 small onion, chopped
- Olive oil
- ½ teaspoon black pepper
- Red pepper flakes
- 4 small cans tomato paste
- Basil
- Oregano
- Bay leaves
- Thinly coat bottom of large sauce pan with olive oil over medium-low heat
- Sauté onion and pepper in oil a few minutes
- Add tomato paste, stir, and simmer for a few minutes
- Add 4 cans water for each can of tomato paste, stir
- Add several shakes of basil and oregano, a few shakes of red pepper flakes, and a few bay leaves
- Cook uncovered over low heat for about 2 hours, stirring occasionally
- Add spices to taste
- Serve hot or freeze for later
