Beef Fajita Bowls
One of my absolute favorites, this is a delicious alternative to traditional tacos, and quite simple. Serves 3 or 4. Betty Crocker's Quick and Easy Cookbook.
- 2 cups cooked rice (see package directions)
- 1 pound boneless beef steak, partly thawed
- Olive oil
- 1 8-inch flour tortilla
- 1 medium onion, chopped
- 1 small pepper, chopped
- ½ cup frozen corn
- 1 cup your favorite salsa
- 2 tablespoons lemon juice
- 1 tablespoon chili powder
- ½ teaspoon ground cumin
- 1 tablespoon ground cilantro
- Cut beef into thin 2-inch strips and cook in large skillet in small amount of oil until browned, set aside
- Saute pepper and onion in skillet in small amount of oil until tender
- Add corn and cooked beef to skillet
- Add salsa, lemon juice, chili powder, cumin, and cilantro to skillet and continue cooking on low heat
- Cut tortilla into short strips
- In separate skillet, fry tortilla strips until just browned on each side
- Drain oil from strips
- Put rice into bowls with meat and vegetable mixture and tortilla strips on top
- Serve hot
