Beef Fajita Bowls Recipe

Beef Fajita Bowls

One of my absolute favorites, this is a delicious alternative to traditional tacos, and quite simple. Serves 3 or 4. Betty Crocker's Quick and Easy Cookbook.

  1. Cut beef into thin 2-inch strips and cook in large skillet in small amount of oil until browned, set aside
  2. Saute pepper and onion in skillet in small amount of oil until tender
  3. Add corn and cooked beef to skillet
  4. Add salsa, lemon juice, chili powder, cumin, and cilantro to skillet and continue cooking on low heat
  5. Cut tortilla into short strips
  6. In separate skillet, fry tortilla strips until just browned on each side
  7. Drain oil from strips
  8. Put rice into bowls with meat and vegetable mixture and tortilla strips on top
  9. Serve hot
